“Zapiekanka” is a most popular Polish street food, and my favorite one. You will find it in almost every city, usually in places that are open 24h., which makes it easy to grab even after a long night of partying 🙂

What I love about Zapiekanka is that it’s simple, super tasty and looks gorgeous. It’s the perfect finger food for a party—and because of its fame, you’ll find it in many tasty combinations. But in my opinion, the best way to enjoy Zapiekanka is to discover its traditional variant first.

#What you need

  • A 500g mix of mushrooms. I have chosen Paris mushrooms and bay boletes, but use the ones you like most
  • 1 Baguette
  • Persil
  • 1 big onion
  • A lot of chives
  • 250g of young Mirromullet cheese. If this is hard to find, use cheddar or mozzarella
  • Butter 
  • Salt, Pepper
  • Ketchup

#step 1

Start by taking a big pan and adding 1/8 of your butter. Let it melt. While that happens, gently wash your mushrooms in water, and cut them into small slices. (The shape is no big deal, but make sure they are small; otherwise, you will have trouble eating them.) Chop your parsley, and your onions into small cubes. Drop everything—parsley, onions and mushrooms—into your buttered pan and stir well.

Fry until your mushrooms are soft and tender, adding water from time to time to avoid burning. Season with salt and pepper.

#step 2

Now set aside this “stuffing” move onto your cheese! Slice it into medium-sized pieces. Then cut your baguette in half. If you plan on serving more than two persons, you can take this same baguette and cut it into slices along its width. Place your cut baguette on cooking paper or aluminum foil, and begin the decorating portion.

First, put your stuffing on top. Add a lot! Then cover that layer with your cheese slices (as much as you wish).

Set your oven to 240° and, once it is ready, place your meal inside, preferably with the air flow option on if you have one. Cook for 10-15 minutes, checking from time to time. Pull it out when the cheese is nicely melted and slightly burnt.

#step 3

This is the last and best part of the recipe! Add a bit of ketchup on top of your prepared Zapiekanka. Then sprinkle on some thinly chopped chives. Voilà! It’s ready to be served. Bon appetit!
